Onion Pakoras

Onion Pakoras
Ingredients    

1 Cup Besan
2 To 3 Onions
3 Green Chillies
4 Curry Leaves
5 Red Chilli Powder
6 Salt
7 Oil

Method of cooking    

Cut Onions Into Thin Long Pieces, And Green Chillies Into Small Thin Pieces In A Bowl, Add Besan, Onions, Green Chillies And Curry Leaves.
Add Red Chilli Powder And Salt To Taste.
Heat Oil In A Frying Pan.
Add 2 Tsp Hot Oil To The Above Mix.
Add Required Amount Of Water To Mix Into A Thick Batter.
Drop Small Amounts Of The Batter Into Hot Oil Carefully.
Deep Fry On Medium Till The Pieces Turn Golden Brown In Colour.

Method of Serving    
Serve Hot With Tomato Sauce.

Potato Noodle Cutlet



Ingredients    

6 Medium Size Potatoes
1 Instant Noodle Packet
Coriander Leaves
100 Gms Maida
4-5 Green Chillies
Oil To Deep Fry
Salt To Taste

   
Method of cooking    

Mash Boiled Potatoes, Add Coriander Leaves, Chopped Green Chillies And Salt. Make The Paste Into Cutlet Shapes.
Cook The Noodles According To The Instructions And Keep Aside.
Batter Maida In Water Into A Running Consistency. 

Roll The Cutlets In Maida And Again Roll In Cooked Noodles.
Deep Fry In Oil.

Method of Serving    
Serve Hot With Tomato Sauce.

Dal Ka Seera

Dal Ka Seera
Time of preparation :     6 Hours 30 Minutes

Ingredients 
  

500 Gm Moong Dal 'Green'
500 Gm Sugar
500 Gm Ghee
Saffron Soaked In A Little Milk
Elaichi Powder
Water About 250 Ml.



Method of cooking
   
Soak the dal for 5-6 hours, wash and remove the skins well, grind dal fine either in a stone grinder or electric grinder or mixie.

Use as little water as possible.

Put sugar and water in a pan and put to boil, once sugar dissolve add a few tblsp. Of milk.
As the syrup boils the scum will rise.

Remove with a strain.

Further boil till the syrup become sticky between the fingers.

'One thread should fall when poured from a tilted spoon' keep aside.

Heat the ghee in a heavy kadai 'vessel' and add dal.

Keep stirring rigorously to avoid burning.

Once the dal stops sticking to the vessel, stir gradually till golden brown, and ghee begins to separate.

Pour the hot syrup, add elaichi and dissolved saffron.

Stir very carefully, not allowing hand to be scalded.

Cook slowly till all water is absorbed.

Decorate with chopped dry fruit.

Method of Serving   

Serve Hot Especially On A Cold Day.

வளம் சேர்க்கும் வால்நட்

வால்நட்
உடல் பருமன் மற்றும் கொழுப்புச் சத்தால் பாதிக்கப்படுவோர் எண்ணிக்கை நாளுக்கு நாள் அதிகரித்து வருகிறது. உடலில் உள்ள அதிகப்படியான கொழுப்பைக் கரைத்து ஆரோக்கியத்தை மேம்படுத்துவதில் வால்நட் எனப்படும் அக்ரூட்கள் முக்கியப் பங்காற்றுகின்றன என உணவியல் வல்லுனர்களும், ஆராய்ச்சியாளர்களும் தெரிவித்துள்ளனர்.

உடலில் தேவையற்ற கொழுப்புச் சத்தின் அளவு அதிகரிக்கும் போது மாரடைப்பு உள்ளிட்ட பல்வேறு இதய பாதிப்புகள் தாக்கும் அபாயம் உண்டு. மனிதனுக்கு ஏற்படும் சில வகைப் புற்று நோய் கட்டிகளின் வளர்ச்சியைக் குறைக்கும் ஆற்றலும் அக்ரூட்டுக்கு இருப்பதாக மருத்துவ ஆய்வுகள் தெரிவிக்கின்றன. நினைவுத்திறனை அதிகரிக்கும் ஒமேகா 340 ஆசிட்டுகள் அக்ரூட்டில் அதிகம் இருப்பதால் குழந்தைகள், பெரியவர்கள் வரை பாரபட்சமில்லாமல் சாப்பிடலாம். ஆண்டி ஆக்சிடன்ட்கள் இதில் அதிகம் இருப்பதால் உடலில் நோய் எதிர்ப்பு சக்தியும் அதிகரிப்பதாக உணவியல் வல்லுனர்கள் தெரிவிக்கின்றனர்.


ரத்தத்தில் கொழுப்பின் அளவு அதிகமாக கொண்டிருப்பவர்கள் அக்ரூட் பருப்பை தொடர்ந்து சாப்பிட்டு வந்தால், கொழுப்பின் அளவைக் குறைத்து ஸ்லிம்மான, ஆரோக்கியமான தேகத்தைப் பெறலாம்.

இதில் ஏராளமான வைட்டமின் E இருப்பதால் நாளொன்றுக்கு ஒரு கைப்பிடி அளவு பருப்பை உண்டு வந்தால் மேனி பளபளப்பாகும். முதுமையைத் தள்ளிப் போடலாம். பென்சில்வெனியாவில் உள்ள ஸ்க்ராட்டன் பல்கலைக்கழக ஆராய்ச்சியாளர்கள் இது தொடர்பாக நடத்திய ஆய்வில் உடலில் கொழுப்புச் சத்து அதிகம் கொண்ட ஆண், பெண்கள் வயது வித்தியாசமின்றி கலந்து கொண்டனர். முதல் கட்ட பரிசோதனைகளைத் தொடர்ந்து ஒரு வார காலம் குறிப்பிட்ட அளவிலான  அக்ரூட் பருப்புகளை உண்ணக் கொடுத்து கண்காணிக்கப்பட்டனர். அதன் பின்னர் மேற்கொள்ளப்பட்ட சோதனையில் ரத்தத்தில் உள்ள கொழுப்பின் அளவு குறைந்து காணப்பட்டது. இதன் மூலம் அக்ரூட் கொழுப்பைக் குறைக்கும் வல்லமை இருப்பதாக ஆராய்ச்சியாளர்கள் தெரிவிக்கின்றனர்.

Idli Moong Dal Upma

Time of preparation :     25 Minutes
Serves                      :     2

Ingredients    

Steamed Idli               4
Moong Dal                 1/4 Cup
Green Chiles              2
Turmericpowder A Big Pinch
Lemon Juice              1 Tsp
Salt To Taste
Talimpu-
 Mustard Seeds          1/4 Tsp
 Cumin Seeds             1/4 Tsp
 Urad Dal                    1/4 Tsp
 Broken Dried Red Chiles 3 - 4
 Asafoetidaa Big Pinch
 Curry Leaves5
 Oil 2 Tsps
Method of cooking    

Wash Moong Dal With Water And Boil In A Cup Of Water Till It Turns Translucent, Soft But Whole. Remove Stems, Wash And Slice The Green Chiles.
Break The Idli Into Pieces And Crumble The Idli.
Heat Oil In A Pan, Add All Other Talimpu Ingredients In Order.
When Mustard Seeds Start Spluttering, Add Green Chiles.
Fry Briefly, Add Boiled Moong Dal, Mashed Idli, Turmeric Powder And Salt.
Mix Thoroughly And Cook For A Minute And Remove From Heat.

Hariyala Rava Uttapam

Time of preparation :     30 Minutes
Serves                      :     4

Ingredients      

2 Cups - Rawa
1 Tbsp - Maida
2 Tbsp - Besan
1 Cup - Spinach 'Finely Shredded'
1 - Onion'Finely Chopped'
1-2 - Green Chillies
Salt To Taste
1.5 Cups - Water
Oil

Method of cooking      

In A Bowl Mix Rawa, Besan And Maida.
Soak In Water And Leave For 15 Minutes.
Add Finely Shredded Spinach, Onions, Green Chilies, Salt.
Mix Well. If Consistency Is Thick Add Some Water To Make Batter.
Heat And Grease A Non Stick Tava.
Pour 2 Serving Spoons Of The Batter On The Tava And Spread Evenly Giving It A Round Shape.
Cook On Medium Flame. Put Two Drops Oil On The Upper Side And Turn.
Cook On Both The Sides Till Pink.

Method of Serving    
Serve Hot With Coriander/Coconut Chutney.

Beetroot Urad Dosa

Beetroot Urad Dosa
Time of preparation :     30 Minutes
Beetroot Urad Dosa

Ingredients    

Beetroot 1/2 Of Medium Size
Urad Dal1/2 Cup
Rice Flour1 Cup
Green Chiles 2 - 3
Cumin Seeds1 Tsp
Cilantrofew Leaves
Salt To Taste
Oil As Required

Method of cooking    

Soak urad dal in water for around 3 hours. Refresh the urad dal in fresh water and grind it into fine paste adding enough water. 


Remove the urad dal onto a mixing bowl, add rice flour and salt. 


Mix everything thoroughly and keep covered in a dark place for 6 - 8 hours. 


Wash and finely chop cilantro leaves. 


Peel, remove ends, wash and roughly chop beetroot. Remove stems, wash and roughly chop green chiles. 


Grind chopped beetroot, green chiles and salt into paste using a grinder. 


Mix the fermented dosa batter with ground beetroot mixture and keep aside. 


Heat a flat pan on medium - high heat. 


Pour a ladle full of beetroot dosa batter and spread with back of the ladle in circular motion into thin dosa. 


Layer the dosa with chopped cilantro and cumin seeds. 


Pour few drops of oil around the dosa and fry till it turns golden brown in color. 


Turn the dosa on other side, fry for couple more seconds and carefully remove the dosa from heat. 


Repeat the same with remaining beetroot dosa batter for more dosas. 


Also, store the dosa batter covered in a refrigerator for couple more days if required. 


Serve beetroot dosa with coconut chutney or with chutney of your choice or with sambar.
